Ima(GIN)ing New Flavours

Featured Partnership: Creating a new gin at the Rundle Bar with Wildlife Distillery, Canmore, AB

Rundle Bar Gin is more than a spirit. It is a celebration of local craft and collaboration. Created in partnership between Rundle Bar at Fairmont Banff Springs and Wild Life Distillery, this small-batch gin brings the taste of the Canadian Rockies straight to your glass. Infused with botanicals and creativity, it is a fresh take on a classic.

Matt Widmer, co-founder of Wild Life Distillery, was eager to take part. Raised in the Banff region, he felt deeply connected to the project. The team experimented with new flavour combinations, leaning into citrus-forward notes for a refreshing finish. They also used butterfly pea flower to create a natural, vivid blue hue that transforms when mixed into cocktails.

The gin was developed through close collaboration between the bar team and the distillery. Multiple rounds of testing and tasting helped shape the final product. The result is a smooth, vibrant gin that reflects both innovation and place.

The launch of Rundle Bar Gin came at an exciting time coinciding with Rundle Bar reopening following a major restoration. Once the hotel’s main lobby, the space now spans two elegant storeys. It features rich wood accents, bronze engravings, and a rolling library ladder. A grand piano and dedicated stage bring live music into the mix, making it the perfect spot for après drinks or late-night lounging.

Signature cocktails featuring the new gin are available at the bar. Each one highlights the bright, floral profile of the spirit. Guests looking to bring a bit of Banff home can also purchase Rundle Bar Gin at STOCK Food & Drink. The perfect souvenir or gift from Banff for those the like a little Gin in their life!

Sip the flavours, savour the story.
